For all the busy cooks out there, here are a couple of recipes to help you put dinner on the table quickly, easily, and economically. With a crockpot entree of meat and potatoes, add a make-ahead green bean salad and you are ready to feed your family a nutritious dinner in no time at all.

PORK ROAST WITH ONIONS AND POTATOES

This recipe requires a 4-quart slowcooker for best results.

Approximately 3 lb boneless pork loin roast, trim off fat

1 large garlic clove, sliced

5 medium potatoes, washed, cubed, unpeeled

1 large onion, sliced

3/4 cup water (or tomato juice, if desired)

1 tbsp low-sodium soy sauce

1 tbsp cornstarch

1 tbsp cold water

Make slits in roast in insert slices of garlic. Place roast under broiler to brown. Put potatoes in slow cooker. Add 1/2 the onion slices. Place roast atop vegetables and cover with remaining onions. Combine water or juice with soy sauce and pour over roast. Place lid on slowcooker and cook on low about 8 hours. When ready to serve, remove roast and vegetables from cooker. Combine cornstarch and cold water. Add to the liquid in the slow cooker. Turn cooker to high until liquid is thickened. Slice meat and serve thickened liquid over the meat and vegetables.

This recipe has a few more protein grams than carbs so it is excellent for diabetics who want to enjoy some good old “meat and potatoes”.

GREEN BEAN SALAD

2 cans French-style green beans, drained

1 small can of peas, drained

4 celery sticks, diced

1/2 medium bell pepper, diced

1 onion, diced

1small jar pimento

Dressing:

1 1/2 cup Splenda

1 cup cider vinegar

1 tsp salt

1/2 cup olive oil

1 tbsp water

In a medium mixing bowl, combine all the vegetables together.

To make the dressing, in a seperate mixing bowl combine, all the dressing ingredients together. Pour dressing over vegetables, toss to mix well and refrigerate for several hours or overnight. One and a half hour before serving, drain vegetables. Note: This is a great dish to make ahead for convenience later.

Enjoy!

Do you have a crock pot in a closet or kitchen cabinet someplace in your house? Are you a throwback to the 70’s? I am! But what the hey! When was the last time that you used it to actually cook something? The crock pot is not some old “fad” that has come and gone you know! The crock pot is alive and well today! Just take a look at how it has evolved over the years when you go to the big retail outlets in your town. I remember when they were strictly “manually” operated. A manual knob for warm, medium and high. Today, they are all glitzed up with fancy electronic controls and readouts. Today, they are like the crock pots that you would expect on the starship Enterprise! The crock pot is not a lazy way of cooking, on the contrary it is so efficient as to be able to prep the ingredients you want then put them in the crock in the morning and when you get home, viola! dinner is served. It is an economical way of cooking. If you are a chili lover as I am then you know that the crock pot is a great way to make your best chili recipes quickly and easily! So let’s make some chili shall we!

The ingredients:

3 pounds of steak. You can use round, flank, skirt, chuck if on a budget. Any cut you want. I like to cube and shred the meat for texture purposes.

1 15oz can of beans. Any will do, kidney, small red beans, pinto beans. No white beans for this recipe though!1 large onion finely chopped either a brown or red onion the choice is yours.

1 large green bell pepper finely chopped.
4 bulbs of garlic finely chopped.
1 small can 6-8 oz tomato sauce.
1 small can 6-8 oz tomato paste.
1 6-7 oz can of diced green chilies.
1 big can 28oz of fire roasted tomatoes plain or with green chilies mixed in or 6 to 8 large tomatoes that you have roasted on the BBQ.

1 tablespoon of California chili powder.
1 tablespoon of New Huatulco chili powder.
1 teaspoon of smoked paprika.
1 1/2 teaspoon of cumin.
3 tablespoons of olive oil.
1 1/2 teaspoons of salt or season salt.

OK, Let’s get cooking!

I love large skillets! my fave is a cast iron skillet. I am old fashioned that way! So, get a large skillet and put your beef in it to brown it up in the 3 tablespoons of olive oil. When the beef is all browned it is time to toss it into the crock pot and then toss the rest of your ingredients in there as well! Cook this mixture for 6 to eight hours, and if you are home at the time then taste it every now and again to see if you want to add something to it or not! As an aside as always I suggest cooking this mixture or any chili recipe a day in advance as the flavors get to mingle together, but if that is not possible that is OK too! This meal is ready to eat and enjoy!

West Bend is a solid company known for their quality slow cookers. I want to share with you a great chicken recipe for use in a West Bend slow cooker. So you like great tasting food? Me too and I love to cook things in a slow cooker and smell up the house all day long. So with no further ado here is a great recipe to try out.

1. Your gonna need a 6 ounce can of tomato paste
2. Grab 2 cloves of garlic minched
3. 2 tablespoons of vegetable oil
4. 2 tablespoons of butter
5. Take 3 big boneless skinless chicken thighs and cut into small bite size chunks
6. Dice up an onion just one
7. 2 teapoons of tandorri masala
8. A tablespoon of curry paste
9. 2 teaspoons of curry powder
10. 14 ounces of coconut milk
11. A cup of just plain old yogurt
12. A teaspoon of garam masala

Here is some help for you to get that all put together:

Go ahead and melt down that butter and vegetable oil right around a medium heat is what you want. Now throw in your onion that garlic clove you minched up and that yum yum chicken. You gonna cook that till you see the onion turning translucent should be between 7 to 10 11 minutes. Now I want you to put everything else in there except for the coconut milk and yogurt. Take that great concoction you have there and drop it right down into your West Bend slow cooker. Now as your pouring that in go ahead and add that yogurt and milk. Now set that baby on high for 6 to 8 hours. You will know you are coming to the end when that chicken gets nice and tender. Now after all that work, go ahead sit down and taste you some of that Yum Yum slow cooked chicken.

Thanks for stopping by,
Clarence Jacks

After unsuccessfully searching high and low for an old-fashioned, yet unique spaghetti sauce that didn’t taste like it was only to be used on spaghetti, I decided to make my own.
The task of picking the right ingredients and pairing them with the wide variety of family-favorite comfort foods I prepare on a regular basis was the hard part.
I selected my family’s favorite ingredients that, when combined, perfectly compliment the overall flavors of my very traditional Italian menu, which focuses mainly on rich pastas, beef entrees and garlic-laden side dishes.
The easy part was the preparation, mainly because of my experience with slow cooking meals for our extended family and friends every evening with my parents and grandparents in the old country when I was a little boy.
Early on, I was taught the importance of making the most of each ingredient by slowly cooking the perfect combination of quality ingredients, and in the right order, to bring out the best-possible flavors and let all of the ingredients we slowly cooked to simmer together.
Nearly all the sauces I remember making call for ingredients cooked slowly in this way, to make something that tastes better together than any of the ingredients taste by themselves.
For the nostalgic and traditional Italian flavor I sought after, making use of my tried-and-true slow cooker was the only way to get it right. I’ve seen similar sauces cooked on the stove, or even baked in the oven, but nothing ever quite compares to the old-world flavors and textures created with our traditional slow cooker by West Bend.
The West Bend crockpot, probably my favorite and certainly the most reliable slow cooker I’ve ever used, is at the center of this recipe. Our sauce slowly cooks throughout the day, filling my apartment and family’s fond memories of grandma and grandpa.
I chose ingredients such as butcher-grade ground beef, just like I used to get with my parents growing up in Sicily. Fresh tomatoes, beef broth, garlic and fine spices filled my cart as I strolled down memory lane, and the local super market just a few blocks west of my downtown apartment.
In a large skillet, I slowly cook generous portions of ground beef over medium heat until nearly all pink color is disappeared. After draining, I combine the beef with whole tomatoes, a bit of tomato paste, beef broth, brown sugar and seasonings (salt, basil, parsley, marjoram and a bay leaf) in my grandmother’s 5-quart West Bend slow cooker.
Slowly cooking and simmering between 6 and 8 hours later, I uncover the slow cooker to see a delicious, red, bubbly brew that fills the kitchen (and the rest of my apartment) with a smell that instantly takes me back to my mom’s kitchen.
I remove the bay leaf, and generously pour over a heaping plate of spaghetti noodles. Even though my spaghetti, another family tradition and well-loved recipe, is the main dish, the sauce is everyone’s favorite.

The past few years have given rise to a wide variety of entertaining cooking shows and informational cooking magazines. This, in turn, has led to a great increase in interest in the art and the science of slow cooking. One of the absolute easiest ways for new cooks to get their feet wet with slow cooking is by following the instructions of a slow cooker recipe and using an old-fashioned crock pot.
Many of the most popular cooking shows that are inspiring people to cook have focused on the use of slow cookers in the home kitchen—in fact, celebrity chefs and home cooks alike can benefit from the use of a slow cooker. Because a slow cooker is like a one stop shop for creating a meal, anyone—from the most inexperienced cook to the greatest chef alive—stands to save time, energy, and money by preparing slow-cooked meals.
Any new cook would be encouraged by the smells and tastes that result from a little time spent with a slow cooker in the morning before heading out to work. To come home from a long day and know that a hot, hearty, tasty meal from a slow cooker is waiting makes it all worthwhile. With a few simple ingredients, the desire to craft delicious home-cooked food, and a versatile slow cooker, even the newest of new chefs will be thrilled with their work and strive to continue cooking wonderful slow-cooked meals.
Slow cookers allow new cooks to unabashedly experiment with a huge array of vegetables, proteins, spices, and other ingredients. With slow cookers, any style of cuisine can be prepared easily over a period of hours and with a minimal amount of work. Even those with virtually no experience in the kitchen can feel confident in their ability to create an immense range of soups, stews, meats, and other dishes at home in a slow cooker.
Because slow cookers operate on the principle of “low and slow,” novice cooks don’t have to worry about the anxiety that can come along with cooking when using other, more stressful techniques that involve high temperatures or open flames. A meal that’s created in a slow cooker bubbles and simmers away over a long period of time, allowing the cook to alter the dish as needed and tweak it until the flavors are just right.
The rewards that can be reaped by a new cook are many—after hours in a slow cooker, there’s a delicious, hearty, home-cooked meal to be enjoyed and savored. And once a new cook begins to see the possibilities that are available by using a slow cooker, he or she will feel confident in branching out to discover the endless number of meal options.

Cooking for just one can be a completely daunting and intimidating task. Most styles of cooking require a cook to use a wide variety of pots, pans, and utensils and lead to a sink full of dirty dishes to clean up after many hours spent in the kitchen. Slow cooking, however, does not.
The slow cooker can be a single person’s best friend in the kitchen. With a little bit of planning and a few extra minutes in the kitchen in the morning, a slow cooker can provide a delicious, simple, and fuss-free meal that’s all ready to go at the end of a long day. Most people just don’t feel up to the task of preparing and cooking a complicated meal for one after working a full day. A slow cooker takes the work out of the cooking process, while still allowing you to create a hearty, home-cooked meal for just one person.
Oftentimes, single people end up eating out at a restaurant or ordering food for takeout because cooking simply requires too much time, energy, and money. Meals created in a slow cooker can truly simplify the cooking process, while still yielding incredibly tasty handcrafted food. The best part is, there’s very little cleanup involved with slow cooker meals. Because nearly all of the work is done in just one pot, there’s no sink full of dirty dishes to dread cleaning up after eating.
An individual who is cooking for just one may have the tendency to fall into a rut with cooking, but slow cookers allow for nearly endless possibilities. Any type of ingredient or cuisine can be incorporated into a slow-cooked meal. The more adventurous or more experienced cook can even modify regular recipes and make them into slow cooker recipes, making his or her favorite foods more readily accessible. Why not experiment with your favorite dish and see how it translates when using a slow cooker instead of other, more complicated and time-consuming methods?
Preparing food in a slow cooker can be as flexible as you need it to be, which makes it the perfect venue for cooking for just one. Slow cookers can also be great for making larger batches of food for the single person who wants to have leftovers for additional meals for lunches or dinners later in the week. This approach also means that slow cooking is extremely economical and budget friendly.
Slow cookers are a great solution to the problem of cooking for one because they simplify and streamline the process. They also allow the cook to be as creative or traditional as they like, knowing that the end results of preparing food in a slow cooker will always be exceptional.
